Now all we seem to do is cook for the little guy. It is great fun cooking for him and getting creative with ingredients to ensure he is getting lots of fruit and vegetables and bonus points if it is something tasty for us to eat too.
These muffins are definitely a winner.
1/2 cup olive oil
2 tablespoons of maple syrup
1 cup (1 and a half medium sized) grated apple
1/3 cup finely chopped walnuts
3 tablespoons milk
1/2 cup almond meal
1 and 1/4 cup self-raising flour
1/2 teaspoon cinnamon
Pre-heat oven to 190C (375F), grease enough mini muffin tins for 36 muffins, or 12 large ones.
Stir together oil, maple syrup, apple, walnuts, eggs and milk then sift in the almond meal, flour and cinnamon. Spoon the mixture into the muffin tins.
Bake for 10-15 minutes or until golden brown. Allow to cool for a few minutes in the tins, before transferring to wire rack to cool.
Delicious served plain or warmed with butter.
