Who doesn't have their own zucchini slice recipe? It is an easy mid-week meal for us and produces some super tasty and quick leftovers. I was not introduced to this recipe until an evening with my in-laws, I have later seen it pop up in many home recipes since then. It even popped up in our work canteen a few weeks ago.
This was an old recipe on the blog, but now that I have my fancy new camera and we were already making this for dinner I knew I had to take some new snaps of this favourite mid-week dinner.
4 large zucchini's, grated 3/4 cup self raising flour 1 cup grated cheese 5 eggs 4 middle rashers of bacon (or 6 short cut), diced and cooked 1 onion, diced and cooked
Combine all ingredients into a large bowl ensuring it is mixed well, then place in an oven-proof dish and cook for 40 minutes or until brown on top. We usually serve it with fetta or a little tomato sauce (ketchup) but it is just as good on its own. Also delicious the next day at work.
