So I had an amazing Chia pudding up at The Lorna Jane cafe in Brisbane a few months ago and I wanted to at least attempt to recreate it. So, I did some experimenting and then some googling and I actually found a similar recipe it seems but I used that as a base to just estimate.
Now I have to say, things I am loving lately are Brookfarm muesli and Chia Co chia, they are both amazing Aussie companies. After meeting Martin Brook at the Good Food Show in Sydney about a month ago, I am even more obsessed.
I love my Refrigerator Oats so much, yet now I have a new favourite!
Easy Chia Pudding (Serves 1)
135ml lite coconut milk
2 tablespoons of chia seeds
Mix the two ingredients in a container (I tend to make a double batch and use a whole small tin of coconut milk).
Then if you feel like it, I always do, add some Brookfarm toasted muesli and frozen blueberries. I use frozen because $8 for a pewny little punnet is highway robbery. I told you I wasn’t kidding when I said “easy”.
