Last weekend I found myself with half an avocado and an egg, I have been seeing these wonderful looking baked egg recipes all over Pinterest (<– follow me!). So, I was excited to give it a go. It was so, so simple that I have already made it a few more times! It is a great breakfast option with a side of fruit but it is really good for a quick lunch when working from home with a nice salad.
So what do you need to do?
Grab an avocado, pull out the seed and dig a little more avocado out with a spoon to make a nice little well for the egg to sit in. Crack a small egg into the middle and then pop it into the oven for around 10-15 minutes at 180 C (approx 400F) before you pop a little grated cheese on the top and cook for another minute or so.
Then you have yourself this amazing warm egg with its cheesey top and getting a hug by a lovely baked avocado.
