I was lucky enough to receive a sample of the brand new Love Beets baby beetroots. I absolutely love beetroots and even better when I get to have them fresh without the effort of peeling and cooking them. They are Australian grown, all natural and they come ready to eat - what could be better? Someone else doing the washing up? Probably.
So I had to put my thinking cap on and come up with a recipe to make the most of these delicious beetroots. It was a rainy Friday night (a common occurrence in Sydney at the moment, so I got a little lazy and just went with a beetroot and feta tart. This one is super easy though!
What you will need:
1 pack of Baby Beets
2 large vol au vents
1 large onion
Salt and pepper
Cook the onion with a nice pinch of salt and pepper, then combine the beetroots and onion in the vol au vent and pop it in the oven for around 10 minutes. Sprinkle on the feta and dig in. Makes 2 vol au vents.
