This recipe is a quick week night favourite for us. It takes all of about 15 minutes to make. Marcus is the King of the kitchen and he has been making this for me for years, but last week he was working late so I had to either make my own or starve. With some quick instructions he explained how to make it.
This recipe does have raw egg in it, so be cautious if you are pregnant.
4 rashers bacon, cut into small pieces
1 onion, chopped
3-4 eggs (depending on the size)
1/2 cup of parmesan cheese, grated plus a little for serving.
pasta of your choice (I used linguini, but prefer fettucini)
(Serves 2-3 depending on how hungry you are)
1. Cook the bacon and the onion in a pan
2. Start cooking the pasta
3. Combine the eggs and parmesan cheese in a bowl.
4. Place the pasta into the pan with the bacon and onion and stir, then add the egg mixture.
5. Serve with a little parmesan.
