I am all about saving a dollar where I can and when it comes to food, the fact that it usually tastes better when you spend less (because you make it yourself) is always a good thing in my book. So let me talk you through how we make our own delicious chicken schnitzels.
- chicken tenderloins
- eggs (I used 2)
- tablespoon of milk
- 1.5 cups of plain flour
- 1.5 cups of stuffing mix
- Olive oil for cooking
1. Bash out your tenderloins until they are about half a centimetre or quarter of an inch thick. I use 4 sheets of clingwrap - 2 on the bottom, two on top - and put that basher to good use.
2. Lay out your schnitzeling stations; flour, then eggs mixed with the milk, then the stuffing mix. Also be sure to use more than one fork so that you don't end up with a battered fork. I use one in each area.
3. Flour, egg, stuffing mix - repeat.
4. Shallow fry in a pan of hot oil (on a medium heat) until beautifully golden brown.
Cook up a big batch and keep them in the fridge for up to 3 days. They are great chopped up in salads, or a wrap, or just with a hedgehog potato for dinner!
