This past weekend I felt a little urge to finally make some of the countless recipes I have been pinning away on Pinterest. This one comes to you from Itty Bitty Kitchen and it was delicious, quite tart though so if you don't like a lot of lemon in your baked goods you can just go without.
Be sure to allow the butter to get to room temperature otherwise you will have a hard time mixing it in with the other ingredients.
I found the fork method alone was causing my biscuits to crack so I started smushing them down with my fingers first then putting the indent in them, that seemed to work better.
Then the delicious lemon filling! Be sure to refrigerate these little tasties after you smoosh them together otherwise the icing just collapses in the middle.
I used the additional half a cup of icing as the recipe suggests, although next time I think my biscuits need to be a little smaller, then I would get a lot more bang for my buck, not just 8 melting moments.
