1 brown onion, chopped finely
1 potato, peeled and chopped into small chunks
Method: Start by boiling the potatoes until they are soft, then place the onion in a small pan (ours was 20cm or approx 7 inches) and once they are cooked you can add in the potato for about a minute to get some glaze and seal.
Then pour in the 3 eggs that have been whisked together and leave it to cook until you are able to lift the bottom up with a spatula.
Then just flip it over - easy right? As it turns out, the flipping was the most difficult part! So some websites have said you can actually just pop it into the oven if you have a suitable pan.
Pop it on a plate and impress your family with your amazing Spanish cooking flair!
It was absolutely delicious! Not quite enough for the two of us for dinner though so we added some delicious sides to add to our tapas meal. Garlic mushrooms, tiny stuffed baby capsicum and some very aussie prawns.
